The Place & Producers "Chq’ul" (pronounced ‘CH-KOOL’) means "the mountain" in the native Mam language of the Gomez family, who cultivate this exceptional coffee on a small, 2-hectare farm located in the majestic Sierra de los Cuchumatanes.

The farm's history is deeply rooted in family tradition. Armando Gomez began working the land alongside his grandfather, Eusebio, at the age of 23. By 1995, Armando began purchasing the farm from his extended family to keep it in their hands. Today, the entire family is involved in production; Armando’s wife and his oldest son, Mauricio, manage the fertilizing, planting, picking, and washing. Mauricio has recently stepped into a greater leadership role, bringing a new generation’s energy to spearheading the farm.

Benefitting from 60–70 inches of annual rainfall and a natural on-site water spring, the coffee varieties grow under a canopy of shade trees. This specific lot is named "Sauco" after the elderberry trees that provide shade to the coffee plants.

Processing This coffee is processed using the traditional washed method. After selective hand-picking, the cherries are pulped and washed utilizing the farm's natural mountain spring water.

The high altitude of up to 1900 meters combined with careful processing allows the beans to develop exceptional density and a pristine, clean profile that brilliantly showcases its distinct terroir.

In the Cup A smooth, complex profile with medium malic and citric acidity, a medium body, and a soft, velvety mouthfeel. You may find notes of:

  • dark chocolate and nougat

  • elderberry and plum

  • white grape, chardonnay, and browned butter
