The Place & Producers

This coffee is a blend from smallholder farms in the Eko Heto area, just outside the town of Bajawa in Flores. Farmers here work small plots and are connected through a local coffee program that has helped establish milling infrastructure in the surrounding highlands.

Coffee is typically delivered through local collectors who act as intermediaries, registering each farmer to track deliveries and payments. These relationships also help facilitate support in the form of seedling distribution and ongoing training, contributing to both quality and long-term farm sustainability.

Farming in this region is largely organic by default, with minimal external inputs, even if not formally certified.

Processing

Coffee is processed using the washed method at small local mills.

Cherry is depulped using small machines, then fermented for 24–36 hours to break down the remaining mucilage before being washed clean. Drying takes place on patios and raised bamboo tables, which allow for consistent airflow and even drying conditions.

This approach results in a heavier, more structured profile while maintaining clarity in the cup.
